Importance and Role of Gastronomic Services in a Hotel

Abstract:

Tématem této bakalářské práce je úloha a význam gastronomických služeb v hotelu a jejím cílem je specifikovat, jaký je význam stravovacích služeb v porovnání s dalšími službami nabízenými v luxusním wellness hotelu Chateau sv. Havel Praha. Teoretická část práce mapuje základní teoretická východiska prolínající se s historií vzniku ubytovacích zařízení, jejich klasifikací a specifiky. Dále se nahlíží na stravovací úsek v hotelu, jeho pracovníky, nabídku a hotelovou snídani. V praktické části je provedena analýza spokojenosti hostů vybraného ubytovacího zařízení s gastronomickými službami, a to na základě vlastního šetření. První část výzkumu se zakládá na sekundárních zdrojích a analyzuje recenze uživatelů na rezervačních portálech Booking.com a TripAdvisor. Druhá část výzkumu sestává z dotazníkového šetření, kterého se účastní hosté hotelu. Na základě získaných výsledků analýz jsou navržena doporučení, která by měla přispět k větší spokojenosti zákazníků a zlepšení reputace hotelu.

Abstract:

The topic of this bachelor thesis is the role and importance of gastronomic services in the process and aims to specify what is the importance of catering services via the service offered by the luxury wellness hotel Chateau St. Havel Prague. The theoretical part of the thesis maps the basic theoretical background of the conceiving of accommodation facilities, their classifications and specifics. Furthermore, it looks at the catering section of hotel, its workers, offer and hotel breakfast. The practical part is a guest satisfaction analysis of the selected accommodation facility with grastronomic services, based on its own investigation. The first part of the research is based on secondary resources and analyzes user reviews on booking portals Booking.com and TripAdvisor. The second part of the research consists of an indigenary survey, which participates in the hotel guests. Based on the results of the analyzes, recommendations are proposed that should contribute to the cruise customer satisfaction and improve hotel reputation.
