Business Model Canvas for a cultural gastronomic facility

Abstract:

Hlavním cílem diplomové práce je učinit strategická rozhodnutí v rámci modelu Business Canvas a navrhnout vhodný Business Model Canvas pro netradiční kulturní kavárnu spjatou s živou hudbou a výtvarným uměním, kde vznikne příjemná atmosféra pro odpočinek hostů. Teoretická část diplomové práce popisuje jednotlivé stavební kameny Business Modelu Canvas, dále také shrnuje náležitosti zvolených technik usnadňující tvorbu podnikatelského modelu Canvas, kterými jsou persona, mapa empatie, brainstorming a vizualizace. Součástí teoretické části je porozumění prostředí Business Modelu Canvas, kterým byla zvolena Česká republika ¬- konkrétně Praha. Praktická část diplomové práce se zabývá provozováním kavárny v podmínkách České republiky, kávovým trhem České republiky a analýzou pražských konkurenčních kulturních kaváren. Analýza kulturních kaváren situovaných v Praze byla provedena primárním výzkumem, a to dotazníkovým šetřením a metodou pozorování. V praktické části se nachází i detailní popis vlastního Business Modelu Canvas pro kulturní kavárnu nazvanou APP Café (Art & Piano & Peace). V praktické části lze také nalézt vypracované persony a mapy empatie pro jednotlivé zákaznické segmenty navrženého Business Modelu Canvas pro kavárnu APP Café.

Abstract:

The main purpose of the diploma thesis is to make strategic decisions within the Business Model Canvas and to design an own appropriate Business Model Canvas for a cultural coffee house connected with music and art offering its guests a pleasant atmosphere for a relaxation. Theoretical part of the diploma thesis describes the individual building blocks of the Business Model Canvas, further on the theoretical part summarizes requirements of the chosen techniques, which simplify the Business Model Canvas’s composition. The techniques, which were selected for the purpose of creating the Business Model Canvas were - persona, empathy map, brainstorming and visualization. The understanding of the Business Model Canvas’s environment is also embodied in the theoretical part of the diploma thesis. For the Business Model Canvas was chosen the environment of the Czech Republic – specifically Prague. Practical part of the diploma thesis devotes to running a coffee house in the conditions of the Czech Republic. Also, the practical part is dedicated to the coffee market of the Czech Republic and to the competitor analysis of Prague cultural coffee houses. The competitor analysis of the cultural coffee houses situated in Prague was performed by the primary research using the questionnaire and the method of observations. In the practical part also occurs the detailed description of the own Business Model Canvas for the cultural coffee house named APP Café (Art & Piano & Peace). In the practical part one can also find the elaborated personas and empathy maps for each customer segments of the designed Business Model Canvas for the coffee house APP Café.
