Analysis of the business processes in Food and Beverage part of selected hotel

Abstract:

The topic of master´s dissertation „ Analysis of the business processes in Food and Beverage part of selected hotel“ is the analysis of the business processes in Food and Beverage part of hotel Motel One in Prague. The main target of this thesis is to describe, model and evaluate current state of processes that operate in selected part of hotel. In the theoretical part of this thesis is description of process controlling followed by explanation of various process modelling methodologies. Also the theoretical part describes the main points of the thesis topic as Food and Beverage part, hotel and appropriate hotel information. The analytical part deals with the basic standards for creating process models. It describes real facts and information found during the consultation with the manager regarding the functioning of the selected part. Facts found in processes in selected hotel are applied to the ARIS methodology and individual diagrams, maps or structures. Processes are applied and analyzed in the proposal part of the thesis. In the proposal part, the applied and analyzed processes are optimized in written form. Possible adjustments and improvements to the booking process of a reservation are suggested. It is possible to obtain the necessary information about the possibility of improving individual processes in order to maximize the benefit of the hotel's guest satisfaction and improve the functioning of the food and beverage processes.

Abstract:

Témou diplomovej práce „Analýza procesov riadenia stravovacieho úseku vybraného hotelu“ je analýza procesov stravovacieho úseku hotelu Motel One v Prahe. Hlavným cieľom práce je identifikovať, popísať, modelovať a zhodnotiť momentálny stav procesov, ktoré pôsobia v hoteli a v stravovacom úseku. V teoretickej časti práce je popísané procesné riadenie s následným vysvetlením rôznych metodík modelovania procesov. Taktiež sú v teoretickej časti popísané základné body témy diplomovej práce ako stravovací úsek, hotel a patričné informácie o hoteloch. Analytická časť sa venuje základným štandardom k vytváraniu procesných modelov. Sú v nej popísané reálne fakty a informácie zistené pri konzultácii s vedúcim pracovníkom ohľadne fungovania stravovacieho úseku. Reálne zistené procesy vo vybranom hoteli sú aplikované do metodiky ARIS a jednotlivých diagramov, máp či štruktúr. V návrhovej časti sú aplikované a analyzované procesy písomne optimalizované. Sú navrhnuté možné úpravy a zlepšenia procesu vytvorenia rezervácie. Je možnosť získania potrebných informácií o možnosti vylepšenia jednotlivých procesov s cieľom maximalizácie úžitku spokojnosti hosťa daného hotela a zlepšení fungovania procesov v stravovacom úseku.
