Evaluation of the quality and geographical origin of grapevine

Abstract:

Tato bakalářská práce se zabývá metodami, které jsou zaměřeny na hodnocení kvality a geografického původu révy vinné. Vinařství má bohatou historii, která sahá až do dávných dob starověkého Středomoří. Dnes se vinice této rostliny nachází po celém světě a přináší plody s různorodými chutěmi a charakteristikami. Avšak s rozvojem vinařství přichází i problémy, jako je falšování vína, které poškozuje důvěru spotřebitelů a celého průmyslu. V bakalářské práci jsou zkoumány metody, které pomáhají odhalovat falšování vína. Zkoumané analýzy, jako je ICP-OES, ICP-MS, AAS, HPLC, NMR a UV-IFS, poskytují vinařům a kontrolním orgánům důležité nástroje pro ochranu autenticity a kvality vína. Jejich správné využití společně s pečlivým sledováním výrobního procesu přispívá k ochraně spotřebitelů a udržení důvěry vinařského průmyslu.

Abstract:

This bachelor thesis explores methods aimed at assessing the quality and geographical origin of grapevines. Winemaking boasts a rich history tracing back to ancient times in the Mediterranean. Presently, vineyards of this plant sprawl globally, yielding fruits with diverse tastes and characteristics. Nonetheless, the advancement of winemaking presents challenges such as wine counterfeiting, which damaging consumer trust and the entire industry. The thesis delves into methods aiding in the detection of wine counterfeiting. Analytical techniques like ICP-OES, ICP-MS, AAS, HPLC, NMR, and UV-IFS equip winemakers and regulatory bodies with vital tools for safeguarding the authenticity and quality of wine. Their proper application, coupled with meticulous monitoring of the production process, contributes to consumer protection and upholds trust in the wine industry.
