Carotenoids in foodstuff - biochemistry of carotenoids, presence in foodstuff, analysis

Abstract:

Karotenoidy jsou intenzivně zbarvené, v tucích rozpustné pigmenty přítomné v mnoha potravinách, jako jsou ovoce, zelenina či ryby. Tyto pigmenty lze rozdělit do dvou skupin. První skupinou jsou karoteny (např. ß-karoten či lykopen) a druhou xantofyly (např. lutein či ß-kryptoxanthin). Z hlediska lidského zdraví mají karotenoidy významný vliv pro prevenci onemocnění jako jsou karcinogenní onemocnění, kardiovaskulární choroby, diabetes mellitus, osteoporóza, degenerace žluté skvrny oka, ateroskleróza a ischemické choroby srdeční. Používají se jako potravinářská barviva. Vyskytují se přirozeně nebo jsou do potravin uměle přidávána jako potravinářská aditiva. Jsou významným zdrojem vitamínu A. Metody stanovení karotenoidů jsou závislé na matrici, ve které se nachází.

Abstract:

Carotenoids are intensively coloured, in fats soluble biocompounds that are abundant as pigments in foodstuff, for example fruit, vegetable and/or fishes. This colourants are divided into two groups. First group are carotenes (e.g. beta-carotene or lycopene) and second group are xanthophylls (e.g. lutein or beta-cryptoxanthin). From the standpoint of the human health carotenoids have significant effect for prevention of diseases such as carcinogenic diseases, cardiovascular disease, diabetes mellitus, osteoporosis, degeneration of the macula of the eye, atherosclerosis and ischemic heart disease. Carotenoids are used as food colors. These pigments are natural or supplied to food as food additives. Carotenoids are significant source of vitamin A. Methods for determination of carotenoids depend on the matrix.
