Proposal for a New Culinary Concept

Abstract:

Předkládaná bakalářská práce se skládá z několika částí. V teoretické části této práce na téma Návrh nového gastronomického konceptu se zaměřuji na stávající koncepty restaurací Potrefená husa a The Pub - Pilsner Unique bar (dále jen „The Pub“). Pomocí komparativní metody se u každého jednotlivého konceptu zabývám tím, jak daná restaurace vypadá, jaká je nabídka pokrmů a nápojů a také se zaměřuji na pivovary, které je podporují. K získání potřebných dat je využita metoda anonymního nakupování a vlastního pozorování. V závěru teoretické části krátce shrnu informace o daných konceptech, které se mi podařilo získat, a vyhodnotím je. V části analytické se soustředím na samotný návrh nového gastronomického konceptu, kde se obdobně budu zabývat možným vzhledem budoucího konceptu, potenciální nabídkou pokrmů a nápojů. Pro lepší představu o vzhledu připojím také mnou vytvořený grafický návrh restaurace. V návrhové části mé bakalářské práce shrnu data, která se mi podařila získat, a předložím návrh nového gastronomického konceptu, který by byl založen na podpoře malého rodinného pivovaru Chodovar.

Abstract:

In the theoretical part of the thesis proposal for a new culinary concept focuses on existing concepts Potrefená husa and The Pub - Pilsner Unique Bar (hereinafter referred to as " The Pub" ) . Using comparative methods I will focus on these gastronomic concepts , where each individual concept focuses on how a given restaurant looks like , what is the offer of food and drinks and also focuses on breweries that support them . To obtain the necessary data I will also use anonymous methods shopping and personal observations . At the end of the theoretical section I will briefly summarize information for these concepts , which I managed to obtain and evaluate them. In the analytical part I will focus on a design of a new culinary concept , where by analogy I deal with potential future relative concept and the potential range of food and beverages. For a better idea of the appearance I wil join also my created graphic design of the restaurant. In the proposal part of my thesis , I will summarize data that I managed to submit a proposal for a new culinary concept , which was established to support small family brewery Chodovar .
