Detection of Celery as an Allergen in Food by Real-Time PCR
Abstract:
Tato práce se zabývá potravinovými alergiemi u lidí a stanovení jednoho z nejagresivnějších potravinových alergenů, celeru, ve stravě. Potravinová alergie je fenoménem 20.a 21.století a určitě patří k horkým tématům alergologických praxí. V práci je popsána metoda stanovení celeru v potravinách metodou Real-time PCR na Státním veterinárním ústavě v Jihlavě.
Abstract:
This work looks into food allergies in humans and the assessment of one of the most agressive food allergens - celery - in food. Food allergy is a fenomenon of the 20th and 21st century and sure belongs to hotly contested topics in allergological practise. The work describes a Real-time PCR method for celery detection in food performed in State Veterinary Institute Jihlava.
