Offer and quality of services in gastronomy

Abstract:

V současné době je zdravá výživa aktuálním tématem, neboť stále více lidí se stravuje tímto způsobem. Tato práce se zbývá rozsahem a cenou nabídky restaurací zaměřených na zdravou výživu. Mnohdy se setkávám s tím, že v běžných restauracích není dostatečná a kvalitní nabídka zdravých pokrmů, a převládá velmi vysoká cena těchto pokrmů. Proto jsem se rozhodla zkoumat tuto problematiku a také proto, že se o dané téma dlouhodobě zajímám a vyhledávám restaurace se zdravou výživou. Cílem teto bakalářské práce je sledovat ceny, rozsah nabídky a kvalitu poskytovaných služeb ve třech vybraných restauračních podnicích zaměřených na zdravou výživu v Praze. Tato práce je rozdělena na tři části. První část se zabývá́ teorií, tedy stručně zmiňuji pojmy spojené s gastronomií. Dále sleduji vývoj gastronomie, formy společného stravování, formy nabídky, kvalitu a zásady zdravé výživy. Informace byly čerpány z odborné literatury a internetových zdrojů. Druhá část bakalářské práce je část analytická. V této části jsou stručně popsány charaktery restaurací, jejich vizuální stránka, rozsah nabídky nápojů a jídel a také chování personálu. Dále byla v této části bakalářské práce provedena analýza tří vybraných restauracích zaměřených na zdravou výživu. Pro analýzu byly použity převážně výzkumné metody jako dotazníkové setření a pozorovaní. V poslední části bakalářské práce jsou předloženy návrhy a doporučení pro zkoumané restaurace a restaurace zaměřené na zdravou výživu.

Abstract:

Currently, healthy nutrition is a topical issue, as more and more people are eating this way. This work remains the scope and cost of offering healthy nutrition restaurants. I often encounter the fact that there is not a sufficient and high-quality offer of healthy meals in regular restaurants, and the very high price of these dishes prevails. That is why I decided to examine this issue and also because I have been interested in the topic for a long time and I am looking for restaurants with healthy food. The aim of this bachelor thesis is to monitor prices, extent of offer and quality of provided services in three selected restaurants focused on healthy nutrition in Prague. This work is divided into three parts. The first part deals with theory, so I briefly mention the concepts associated with gastronomy. Furthermore, I follow the development of gastronomy, forms of catering, forms of supply, quality and principles of healthy eating. The information was drawn from professional literature and Internet resources. The second part of the thesis is the analytical part. This section briefly describes the restaurant's characters, their visuals, the range of beverages and meals available, and the staff's behavior. Furthermore, an analysis of three selected restaurants focused on healthy nutrition was carried out in this part of the thesis. Research methods such as questionnaire and observation were used for the analysis. In the last part of the thesis, proposals and recommendations for the surveyed restaurants and restaurants focused on healthy nutrition are presented.
