Bakalářská práce se zaměřuje na problematiku mouk vyrobených z alternativních zdrojů, které se neřadí mezi obiloviny. První kapitola je věnována metodám klasifi-kace mouk a jejich rozdělení na základě různých kritérií. The bachelor’s thesis focuses on the issue of flours made from alternative sources, that are not classified as cereals. The first chapter is devoted to flour classification methods, their division based on various criteria.
