Development of the Czech Beer Market with a Focus on Mini-breweries

Abstract:

Tato bakalářská práce hodnotí vývoj českého pivního trhu se zaměřením na minipivovary. Počet malých pivovarů i přes nepříznivou situaci na trhu v poslední době stoupá, a proto jsou minipivovary stále aktuálním tématem. Cílem této práce bylo zjistit, jaká byla úloha minipivovarů při vývoji českého pivního trhu od roku 1989. Na základě takto stanoveného cíle byly postaveny následující výzkumné otázky, a to: "Jak vnímají postavení pivovaru malí provozovatelé z hlediska konkurence schopnosti?", a "Jakým způsobem zasáhl covid-19 do jejich podnikání?" K výzkumu této práce byla použita kvalitativní metoda sběru dat. Získaná data z řízených rozhovorů se zástupci minipivovarů byla na základě interpretační syntézy vyhodnocena a rozdělena do sedmi témat. Výzkum se zaměřuje na specifickou činnost minipivovarů, jeho vznik a vývoj po roce 1989 včetně posouzení vývoje kvality piva v čase, sezónnost a charakter klientely, souvislost s cestovním ruchem a v neposlední řadě na aktuální téma dopad provozu na covid-19. Z výzkumu vyplynulo, že minipivovary jsou často spojeny s dalšími, převážně gastronomickými aktivitami provozovatelů. Za vznikem minipivovarů často stojí tradice, touha, obrovské úsilí a snaha dodávat trhu produkt v nejlepší kvalitě. Dále pivnímu trhu po roce 1989 z velké míry přispěla možnost a dostupnost kvalitního technologického vybavení a jeho způsob financování.

Abstract:

This bachelor thesis evaluates the development of the Czech beer market with a focus on mini-breweries. Despite the unfavorable market situation, the number of small breweries has been rising recently, which is said, why mini-breweries are still a topical issue. The aim of this work was to find out what was the role of microbreweries in the development of the Czech beer market since 1989. Based on this goal, the following research questions were raised: "How do small operators perceive the position of the brewery in terms of competitiveness?", and How did Covid-19 interfere with their business? " A qualitative method of data collection was used for the research of this work. The data obtained from controlled interviews with representatives of mini-breweries were evaluated on the basis of an interpretive synthesis and divided into seven topics. The research focuses on the specific activities of mini-breweries, its origin and development after 1989, including an assessment of the development of beer quality over time, seasonality and character of the clientele, the connection with tourism and last but not least the current topic, the impact of operation on covid-19. The research showed that mini-breweries are largely associated with other, mainly gastronomic activities of operators. The origin of mini-breweries is often due to tradition, desire, enormous effort and an effort to supply the market with the best quality product. Furthermore, the possibility and availability of quality technological equipment and its method of financing greatly contributed to the beer market after 1989.
