Franchising and its application via launching of new gastronomic concept

Abstract:

ABSTRAKT Karel Řezníček, Využití franchisingu při zavádění nového gastronomického konceptu [bakalářská práce], Vysoká škola hotelová v Praze 8, spol. s r.o., Praha 2016, celkový počet stran 61. Cílem bakalářské práce je představení franchisingového konceptu a jeho využití v podnikání. Jsou posouzeny klady a zápory využití franchisingu při otevření nového restauračního zařízení. Dále je provedeno zkoumání rozdílů mezi standardním franchisingem a franchisingem poskytovaným národním podnikem Budějovický Budvar pod názvem IN LOCO, unikátního gastronomického projektu. V současné době existují pouze tři provozovny v rámci tohoto ojedinělého projektu Budějovického Budvaru n.p. IN LOCO v České republice, a proto je analýza provedena metodou experimentu. Je představena koncepce franchisingováho projektu IN LOCO, popsány postupy při jejím zavedení a uvedeny zkušenosti z praxe dosavadního čtyřměsíčního provozu. V závěru práce navrhuji doporučení pro případné zájemce o podnikání formou franchisingu. Zvolený cíl bakalářské práce se podařilo naplnit. Doporučení, která uvádím jsou přínosem pro příjemce při otevření nových restauračních zařízení, omezují rizika jejich podnikání a pomáhají při startu provozu.

ABSTRACT Karel Reznicek, Application of franchising in introducing of the new gastronomic concept [thesis], Institute of Hospitality Management in Prague 8, spol. s.r.o., Prague 2016, the total number of pages 61. The aim of this thesis is to introduce the franchise concept and its application in business. There are evaluated the pros and cons of franchising use when opening a new restaurant unit. Further exploration is made between standard franchising and franchising provided by a national enterprise of Budweiser Budvar under the name IN LOCO, a unique gastronomical project created by Budweiser Budvar brewery. Currently, there are only three premises operating within this unique project Budweiser Budvar IN LOCO in the Czech Republic, and therefore the analysis of the concept is carried out by the method of experiment. There is introduced the concept of franchising IN LOCO project, describing the procedures for its implementation and also there is given practical experience the existing four months of operation. In the conclusion I propose recommendations for those wishing to start own business through franchising. The chosen objective of the thesis was achieved. All recommendations given are the benefit to the recipient when opening new restaurants, limit the risks of their business and help start-up operation.
