Study on the Formation of Supramolecular Complexes of Selected Flavonoids and Cyclodextrins

Abstract:

Diplomová práce se v teoretické části zabývá charakteristikou flavonoidů, cyklodextrinů a tvorbou supramolekulárních komplexů mezi těmito látkami. Cílem experimentální části byla syntéza flavonu a jeho úplná charakterizace pomocí IR, GC-MS, ESI-MS a NMR. Flavon spolu s kvercetinem představují ligandy, u kterých byla pomocí hmotnostní spektrometrie studována schopnost vytvářet supramolekulární komplexy s cyklodextriny. Kvercetin představuje významný antioxidant, a proto byla spektrofotometricky provedena analýza antioxidační aktivity samotného kvercetinu a jeho komplexů s nativními cyklodextriny.

Abstract:

In the theoretical part of this diploma thesis the characterization of flavonoids and cyclodextrins as well as the formation of supramolecular complexes between these substances, is described. The first aim of the experimental part was to synthesize flavone and make its complete structural characterization by IR, GC-MS, ESI-MS and NMR. The ability of both flavone and quercetin formed supramolecular complexes with native cyclodextrins have been subsequently studied using mass spectrometry. Finally, the antioxidant activity of quercetin and its complexes with native cyclodextrins was studied by spectrophotometric analysis.
