Abstract:
Tato práce se zabývá využitím netradičních surovin v gastronomii. Zaměřuje se pouze na rostlinné produkty, a to zejména na pseudocereálie, netradiční luštěniny, tropické ovoce a zeleninu. This bachelor thesis deals with non-traditional raw materials and their usage in gastronomy. It is focused on plant foods, especially pseudo-cereals, non-traditional legumes, tropical fruits and vegetables.
