A Comparison of Sensory Evaluation Methods in Desserts and Sweet Wines Pairing

Abstract:

The Bachelor ’ s thesis, entitled ‘ A Comparsion of Sensory Evaluation Methods in Desserts and Sweet Wines’, focuses on the relationship between the hedonic scale and the Just-About-Right scale. The aim of the work is to answer the question of whether there are links between these scales. The work is divided into three main parts. In the first theoretical part, it focuses on basic information about the sweetness itself, the sweetness in wines and desserts, and includes knowledge about sensory analysis, the hedonic scale and the Just-About-Right scale. The second part of the work is analytical and consists of quantitative and qualitative research involving thirty respondents. In quantitative research, the data were obtained by means of two questionnaires when tasting the combinations of sweet wines and desserts. The first questionnaire was based on the hedonic scale and the second on the Just-About-Right scale. In qualitative research, short interviews were conducted with respondents focusing on the scales. After both studies were completed, data were collected and subsequently evaluated and interpreted. In the third, draft, there is a summary of the results obtained in the analytical section and, on the basis thereof, possible procedures for further research, as well as recommendations on how to use the scales. In this work, there are links between the scales. The work subsequently verified the hypothesis that the hedonic scale is suitable for use by the general public as well, while the Just-Abou-Right scale is more suitable for use with professionals.

Abstract:

Bakalárska práca s názvom Porovnávanie metód senzorického hodnotenia pri párovaní dezertov a sladkých vín sa zameriava skúmanie vzťahov medzi hedonickou stupnicou a stupnicou Just-About-Right. Cieľom práce je zodpovedať na otázku, či existujú vzťahy medzi týmito stupnicami. Práca je rozdelená na tri hlavné časti. V prvej, teoretickej časti je zameraná na základné informácie o sladkosti ako takej, sladkosti vo vínach a dezertoch, sú v nej zahrnuté poznatky o senzorickej analýze, hedonickej stupnici a stupnici Just-About-Right. Druhá časť práce je analytická a je tvorená kvantitatívnym a kvalitatívnym výskumom, v ktorých figurovalo tridsať respondentov. V kvantitatívnom výskume boli údaje získavané pomocou dvoch dotazníkov pri ochutnávke kombinácií sladkých vín a dezertov. Prvý dotazník bol založený na hedonickej stupnici a druhý na stupnici Just-About-Right. V kvalitatívnom výskume boli s respondentami vedené krátke rozhovory so zameraním na dané stupnice. Po skončení oboch výskumov boli zozbierané dáta, ktoré boli následne vyhodnotené a interpretované. V tretej, návrhovej časti sa nachádza zhrnutie výsledkov získaných v analytickej časti a na ich základe navrhnuté možné postupy pri ďalších výskumoch a taktiež odporúčania ako používať stupnice. V rámci tejto práce sa, že vzťahy medzi stupnicami existujú. V práci sa následne verifikovala hypotéza, podľa ktorej je hedonická stupnica vhodná na použitie aj pre širokú verejnosť, zatiaľ čo, stupnica Just-Abou-Right je vhodnejšia pre použitie s profesionálmi.
