Abstract:

VANĚČEK, Jiří. Trendy v kulinářských technologiích. [ Bakalářská práce ] Vysoká škola hotelová. Praha: 2014. 40 stran. Téma mé Bakalářské práce se zabývá problematikou kulinářství v českých restauracích. Používám informace z odborné literatury, důvěryhodných internetových zdrojů a hlavně z mých, troufám si říct, dlouholetých zkušeností v tomto oboru. Ačkoliv žiji v zahraničí, vzhledem k mé práci na zastupitelských úřadech České republiky je česká gastronomie součástí mého každodenního pracovního i osobního života. Hlavní proud mého průzkumu je zaměřen na střední a vyšší třídu společnosti, která, podle mého názoru, zabírá největší část gastronomických potřeb. V teoretické části mé práce jsou popsány gastronomické trendy, které se v současné době prezentují na našem trhu. Dále v této části uvádím fakta o těchto trendech a jejich průkopnících, kteří tyto trendy propagují nebo je dostali do povědomí společnosti. V analytické části mé bakalářské práce prezentuji informace o gastronomických službách, které začínají v závodním stravování a pozvolna přechází do restauračního provozu, čímž se tedy stávají trendy gastronomie. Dalším cílem mé práce je analýza těchto trendů. Pokusím se popsat, proč se drží na poli gastronomie a jsou často vyhledávané, nebo proč tyto trendy rychle vzejdou a zároveň stejně rychle upadnou do zapomění. Dále stručně popíši, jakým směrem se dle mého názoru bude gastronomie posouvat a jaké trendy se udrží a budou diktovat směr stravování. Tento úsudek čerpám z profesního i soukromého života, který mám dodnes velice úzce spojený s gastronomií. V návrhové části prezentuji můj názor ohledně výuky kuchařů na našich učilištích a gastronomických školách. V závěru mé bakalářské práce stručně rekapituluji získané informace a v neposlední řadě moje osobní názory, ke kterým jsem dospěl v průběhu tvorby této práce.

VANĚČEK, Jiří. Trends in culinary technology. [Bachelor`s Dissertation] The Institute of Hospitality Management in Prague: 2014. 40 pages. The subject of my Bachelor´s dissertation are problems of culinary in czech restaurants. I am using information from professional literature, trustworthy web sites and mostlymy long time experience in this field. Despite the fact that I live abroad, my work for the Czech embassies in third countries makes the Czech gastronomy part of my every day work and personal life. Main research is focused on middle and upper class of society, which has the biggest gastronomic requirements. In theoretical part of my study, I am describing gastronomic trends at the current market. I am also presenting facts about these trends and their founders and promoters. In analytical part of my bachelor´s dissertation, I am presenting information about gastronomic service, which begins in establishment catering, then gets to restaurants and becomes a trend in gastronomy. Another subject of my study is analysis of these trends and reasoning, why they stay in the gastronomic field and why they are often wanted or why they reach the top very quickly and then with the same speed they drop right to the bottom and are forgotten. I am briefly describingin which direction, in my opinion, gastronomy will be moving to and which trends will be on the top and will be the leading trend in catering. I use experience from professional and personal life, which is greatly connected with gastronomy. In the part dedicated to suggestions, I present my opinion which is related to cooking lessons in our educational establishments and gastronomic schools. At the end of my bachelor´s dissertation, I will briefly recapitulate the acquired information and my personal opinions, which i gained in the course of realization of this project.
