Determination of selected substances in different stages of fermentation proces of mead

Abstract:

Cílem této diplomové práce bylo stanovení ethanolu, sacharidů a 5-hydroxymethylfurfuralu v různých stádiích kvasného procesu medoviny pomocí separačních technik. Obsah ethanolu byl stanoven pomocí plynové chromatografie s plamenově ionizačním detektorem. Pro stanovení sacharidů byla využita kapalinová chromatografie ve spojení s refraktometrickým detektorem a pro stanovení 5-hydroxymethylfurfuralu micelární elektrokinetická kapilární chromatografie. Tyto látky byly analyzovány během kvašení u tří medovin získaných od včelařů. Vzorky jednotlivých medovin byly odebírány přibližně každý druhý den v průběhu kvašení.

Abstract:

The aim of this thesis was the determination of ethanol, saccharides and 5-hydroxymethylfurfural in various stages of fermentation of mead using separation techniques. The content of ethanol was measured by gas chromatography with a flame ionization detector. Liquid chromatography with refractive index detector was used for the determination of saccharides and micellar electrokinetic capillary chromatography was employed for the analysis of 5-hydroxymethylfurfural. These compounds were analyzed during fermentation of three meads acquired from beekeepers. Samples of each meads were collected approximately every second day during fermentation.
