Proposal for practical implementation of the environmental attitude ?Zero waste? within the scope of the cook apprenticeship program at the Secondary School of Gastronomy in Ostrava

Abstract:

Bakalářská práce Návrh praktické implementace environmentálního přístupu Zero waste pro obor kuchař při Střední škole společného stravování v Ostravě se zaměřuje na problematiku plýtvání surovinami. V teoretické části představuji základní pojmy z oblasti nakládání s potravinami, hygienické zásady, které jsou důležitou součástí fungování stravovacího zařízení, návrhy k eliminaci plýtvání potravinami hlavně v gastronomii. Zmiňuji negativní vlivy plýtvání ve společnosti a v neposlední řadě možná řešení se snahou o minimalizaci plýtvání a využití zbytkových surovin. Cílem bakalářské práce je analyzovat Školní vzdělávací program Střední školy společného stravování Ostrava a zařazení aktuální environmentální problematiky do osnov. Hlavním cílem praktické části je vytvořit učební materiál na téma zpracování surovin a možností dalšího využití zbytkových surovin a zhodnotit didaktickou účinnost vytvořeného materiálu. Výzkumnou část jsem zaměřil na studenty Střední školy společného stravování v Ostravě, abych zjistil jejich informovanost v oblasti základní gastronomické terminologie, bioodpadu a nakládání a zpracovávání potravin prostřednictvím pre-testu v podobě elektronického dotazníku. Následně jsem studentům zaslal učební materiál k tématu a v poslední řadě jsem zmapoval nově nabyté znalosti opětovným vyhodnocením post-testu, který se zakládal na nastudovaném materiálu ve zkoumané oblasti.

Abstract:

The bachelor thesis Proposal for practical implementation of the Zero waste environmental approach for the cook's course at the Secondary School of Catering in Ostrava focuses on the issue of waste of raw materials. In the theoretical part, I present basic concepts of food handling, hygienic principles, which are an important part of the functioning of a catering facility, suggestions to eliminate food waste, especially in gastronomy. I mention the negative effects of waste in society and last but not least possible solutions with the aim to minimize waste and the use of residual raw materials. The aim of the bachelor thesis is to analyze the School Curriculum of the Secondary School of Catering in Ostrava and the inclusion of current environmental issues in the curriculum. The main objective of the practical part is to create a teaching material on the topic of processing of raw materials and possibilities of further use of residual raw materials and to evaluate the didactic effectiveness of the created material. I focused the research part on the students of the Secondary School of Catering in Ostrava to find out their awareness in the field of basic gastronomic terminology, bio-waste and food handling and processing through a pre-test in the form of an electronic questionnaire. Subsequently, I sent the students the teaching material on the topic and lastly, I mapped the newly acquired knowledge by re-evaluating the post-test based on the studied material in the researched area.
