Trends in the Offer of Food and Beverage Applied in Gastronomy

Abstract:

Bakalářská práce na téma Trendy v nabídce pokrmů a nápojů uplatňované v gastronomii je rozdělena do tří hlavních částí. Teoretická část se zaměřuje na gastronomii a její vývoj, nabídku pokrmů a nápojů, způsob prodeje a formu nabídky, jídelní lístek, nápojový lístek a menu. Především se soustředí na vybrané gastronomické trendy dnešní doby. Cílem analytické části je identifikovat moderní gastronomické trendy se zaměřením na nabídku pokrmů a nápojů a zhodnocení jejich uplatnění v konkrétním velkém gastronomickém provozu. Zabývá se sledováním trendů v restauraci Blackdog v Berouně a jejich aplikací v praxi. Použila jsem metodu dotazování, řízených rozhovorů s majitelkou restaurace, provozním manažerem, šéfkuchařem a číšníky. Zároveň jsem použila metodu pozorování, protože v této restauraci pracuji na pozici floor manažerky. Součástí výzkumu je i analýza dat z jídelních a nápojových lístků, večerní nabídky a poledních menu v období let 2015-2018. Cílem analýzy tohoto zdroje je zjistit, jak vývoj trendů ovlivnil nabídku restaurace. V návrhové části se zmiňuji o možných rezervách v uplatňování nových gastronomických trendů a nabízím možné inovace.

Abstract:

The bachelor thesis on Trends in the Offer of Food and Beverages Applied in Gastronomy is divided into three main parts. The bachelor thesis covers the topic of trends in the offer of food and beverages is divided into three parts. The theoretical part aims at gastronomy and its development, the offer of food and beverages, the way of the sale and the form of the offer, à la carte menu and beverages menu. The thesis especially focuses on certain gastronomy trends of these days. The goal of the analytical part is to watch the development of gastronomy and the use of new trends in the significant gastronomy business. It deals with the progress of gastronomy trends in restaurant Blackdog in Beroun and their application in business. I used the method of questionning, directed interviews with the owner of the restaurant, the restaurant manager, the chef, the waiters and waitresses. At the same time I used the method of observing as I work in this restaurant as a floor manager. The analysis of information from à la carte menu, beverages menu, lunch and dinner menu from 2015-2018 is a part of the survey. The aim of the analysis of this source is to find out how the development of the trends influenced the offer of restaurant. I am offering some solutions and innovations.
