Evaluation of the quality properties of apricots on the basis of geographical origin

Abstract:

Práce byla zaměřena na meruňky, historii jejich rozšíření, pěstování a látkové složení dle světových oblastí výskytu. V experimentální části práce byly mezi sebou srovnávány odrůdy meruněk jednotlivě i na základě jejich oblastí původu. U plodů 25 odrůd byly hodnoceny vybrané jakostní parametry (obsah titrovatelných kyselin, rozpustné sušiny, kyseliny askorbové, celkových polyfenolů a antioxidační kapacity).

Abstract:

This thesis was focused on apricots, the history of their expansion, their cultiva-tion and composition according to the world's regions of occurrence. In the experi-mental part of the thesis, individual apricot varieties were compared based on their properties and based on their regions of origin. Selected quality parameters (titratable acids content, soluble solids content, ascorbic acid, total polyphenols and antioxidant capacity) were evaluated for fruits of 25 apricot varieties.
