Abstract:

Diplomová práce se zabývá plýtváním potravinami na úrovni spotřebitelů v České republice. Cílem práce je vypracování syntézy poznatků o plýtvání potravinami na úrovni spotřebitele a s důrazem na změny v jejich chování v období pandemie Covid-19 navrhnout možné způsoby prevence plýtvání potravinami v rámci jednotlivých částí životního cyklu potravin v domácnosti. Diplomová práce je rozdělena na dvě hlavní části. První část práce je tvořena zevrubnou rešerší literatury, zabývající se potravinovým plýtváním. Na začátku tematického celku lze nalézt definice pojmů a přehled oblastí, které jsou potravinovým plýtváním zásadně ovlivňovány. Nejobsáhlejší část literární rešerše je věnována spotřebitelskému chování, se zvláštním důrazem na jednotlivá stádia potravinového řetězce, která se na plýtvání potravinami podílejí. Obsahem druhé části práce je analýza vlastního dotazníkového šetření, které díky tomu, že probíhalo v době druhého lockdownu (v prosinci 2020) nabídlo možnost srovnání chování spotřebitelů před a během pandemie, a to zejména v oblastech nákupu a skladování potravin. Navíc, tam kde to bylo možné, bylo provedeno srovnání se zahraničními studiemi. V závěru jsou zformulovány nejvýznamnější poznatky o změnách v chování spotřebitelů k potravinovému plýtvání v kontextu pandemie COVID-19.

Abstract:

This Diploma thesis deals with food waste at the consumer level in the Czech Republic. The aim of the thesis is to develop a synthesis of knowledge on food waste at the consumer level and to propose possible ways of preventing food waste within the individual parts of the food life cycle in the household, with an emphasis on changes in their behaviour during the Covid-19 pandemic. The thesis is divided into two main parts. The first part of the thesis consists of a thorough literature review on food waste. At the beginning of this thematic unit one can find definitions of terms and an overview of the areas that are fundamentally affected by food waste. The most comprehensive part of the literature review is devoted to consumer behaviour, with a particular focus on the different stages of the food chain that are involved in food waste. The content of the second part of the thesis is an analysis of the actual questionnaire survey, which, due to the fact that it was conducted during the second lockdown (in December 2020), offered the opportunity to compare consumer behaviour before and during the pandemic, especially in the areas of food purchasing and storage. In addition, where possible, comparisons were made with foreign studies. In conclusion, the most relevant findings on changes in consumer behaviour towards food waste in the context of the COVID-19 pandemic are presented.
