Abstract:

Tato diplomová práce byla aplikovaná na restauraci Fine Buffet by Lovas, která se nachází přímo na lázeňské kolonádě ve městě Poděbrady. Cílem diplomové práce je zhodnocení zkušeností s nově vzniklým gastronomickým konceptem Fine Buffet by Lovas v Poděbradech, což je restaurace s nabídkou All you can eat umístěna ve Spa Hotelu Felicitas. Mezi naplnění cíle diplomové práce zařazuji vyhodnocení spokojenosti zákazníků, poskytování kvality služeb a zhodnocení finančního plánování v podniku na základě rozboru nákladů a příjmů restaurace. Vedlejším cílem diplomové práce je navrhnout určitá zlepšení v podniku, která by mohla vést ke zvýšení spokojenosti zákazníků, zvýšení úrovně poskytovaných služeb, lepší marketingové propagaci, vylepšení práce na sociálních sítích a zvýšení celkové rentability podniku. Pro výzkum jsem v této práci použila metodu dotazníkového šetření, kde byla sbírána primární data přímo v restauraci rovnoměrně během celé provozní doby. Dále jsem využila metodu sběru dat na základě online recenzí na internetových platformách a sociálních sítích. Dále jsem pro naplnění cíle využívala interní data o hotelu a restauraci, pohovory s provozovateli a jednotlivými pracovníky restaurace a využívala jsem také metodu vlastního pozorování celého chodu podniku. Vyhodnocení dotazníku bylo spíše kladné, větší nespokojenost hostů byla zjištěna pouze v obsluze a chování personálu, kde se názory rozcházely, což přikládám střídavosti daného personálu v jednotlivých směnách. V návrhové části poté doporučuji několik, dle mého názoru důležitých a zajímavých kroků k nápravě.

Abstract:

The aim and focus of this thesis is to analyze the practice of the restaurant Fine Buffet by Lovas, which is located inside of a Spa Hotel Felicitas, right at the very heart of the town Podebrady. The main goal of this paper will be reviewing the experience this establishment had with the new emerging concept of dining - All you can eat. I will review and evaluate the quality of the services provided while bearing the establishments costs and income in mind. I will also look at the customers satisfactory rate. Another goal of mine on this assignment is to propose a number of possible improvements within the operation, that could for example lead to an increase of the customers satisfactory rate and a general improvement of the quality of the services provided. I will also look at the restaurants marketing platforms, such as the use of social networks and how they could be enhanced. In order for my research to be the most effective, I decided to go with the method of using a questionnaire, that I created. This method was performed for an extensive period of time and took place in the place of business. I also considered the data that were provided on the internet, such as online reviews the establishment gained on social sites. In order for my data to be the most accurate I found it very crucial to also initiate interviews with not only the owners of the business, but the workers as well. All this helped enormously to be able to form my personal opinion on the operation and contribute with my own ideas and possible solutions to resolve any issues that might have come up. The evaluation of the questionnaires was mostly positive, the only negative observations that I observed was in relation to behavior of the staff, which some customers found unsatisfying. Some on the other hand found it very satisfying, so I reckon the negative opinions were allied to a certain member or members of the staff. As already previously mentioned, I will be proposing a number of key measures that I believe could improve the restaurants operation immensely.
