Additives in wines

Abstract:

Tato bakalářská práce pojednává obecně o potravinářských přídatných látkách, specifičtěji se zaměřuje na jejich využití při výrobě vína. V první části práce je nastíněna historie a technologie vín, do níž je zakomponována i jejich klasifikace. Druhá část práce se věnuje popisu potravinářských aditiv, jejich uzákoněnými podmínkami pro využívání, rozdělením a také jejich uplatněním ve vinařství. Na tento úsek navazuje ústřední část práce, v níž jsou podrobněji popsány vybrané aditivní látky využívané ve vinařství, jejich charakteristika a hlavní účinky. Poslední část práce se zabývá působením aditivních látek na lidské zdraví, kde jsou rozebrány pozitivní vlivy s možným přínosem, ale i negativní vlivy, které pojednávají o existujících zdravotních rizikách účinkujících na zdraví člověka spojené s konzumací těchto látek v potravinách.

Abstract:

This bachelor thesis is about food additives in general. More specifically, it is focused on its usage in wine production. The first part of the thesis outlines the history and technology of wines, which involves their classification. The second part deals with the description of food additives, their legal conditions for use, distribution and their application in viticulture. This section is followed by the main part of the work, where are described selected additives used in viticulture in detail, their characteristics and main effects. In the last part of the work, the effects of additives on human health are descripted. Consequently, the positive effects with possible benefits are discussed, alongside with the negative effects, which present the existing health risks affecting human health associated with the consumption of these substances in food.
