Authenticity as a key tool for the construction of craft breweries' identity

Abstract:

Diplomová práce zkoumá způsoby vytváření autenticity u řemeslných pivovarů. Vychází z výzkumu od Thomase Thurnell-Reada a z jeho dělení autenticity. Kontextuální část se věnuje vývoji pivovarnictví, jeho významu v kultuře a nastiňuje, jak česká společnost pivo vnímá. Teoretická část nastiňuje možnosti zkoumání jídla v rámci sociologie a přibližuje, proč je pro lidi důležité hledat a vytvářet autenticitu při utváření své identity. Metodou sběru dat byly polostrukturované rozhovory se sládky nebo zakladateli řemeslných pivovarů, jejichž analýza je součástí praktické části této práce.

Abstract:

The diploma thesis explores the ways of creating authenticity by craft breweries. It draws on research by Thomas Thurnell-Read and his division of authenticity. The contextual part focuses on the development of brewing, its importance in culture and outlines how the Czech society perceives beer. The theoretical part outlines the possibilities of exploring food within the framework of sociology and presents why it is important for people to seek and create authenticity in the formation of their identity. The method of data collection was semi-structured interviews with brewers or founders of craft breweries, the analysis of which is part of the practical part of this thesis.
