Tématem bakalářské práce byla kvalita mléčných výrobků se zaměřením na sýry. Teoretická část se zaměřuje na obecnou charakteristiku oboru mlékárenství, výroby sýrů, popisu sýrů. V analytické části práce byly komparovány makroživiny, mikroživiny, obsah soli a byla porovnávaná hodnota bílkovin vybraných sýrů, které byly přepočteny na sto gramů, pro lepší přehlednost komparace. The topic of the bachelor thesis was the quality of dairy products with a focus on cheeses. The theoretical part focuses on the general characteristics of the dairy industry, cheese production, description of cheeses.
