Business plan in gastronomy section - case study Motorest Wims

Abstract:

Cílem práce je vypracovat reálný podnikatelský záměr na provozování bistra po jeho částečné rekonstrukci ve Studenci u Náměště nad Oslavou v Kraji Vysočina. Navrhovaný podnikatelský záměr bude v budoucnu použit pro reálné provozování bistra. Podnikatelský záměr vychází ze skutečnosti, že v dané lokalitě se zařízení tohoto typu nevyskytuje, respektive existuje pouze jedno se specializací na pokrmy vyrobené ze zvěřiny. Autorkou představovaný koncept bistra je postaven na kvalitě a rychlosti připravovaných jídel a profesionálním chováním obsluhujícího personálu. Cílem je především získat nové zákazníky z blízkého okolí, kteří dosud o bistru nevěděli a také skupinu náhodně projíždějících motoristů a cyklistů, které nový koncept bistra osloví. Pro naplnění cíle diplomové práce autorka použila metody osobního pozorování, metodu dotazování, metody komparační a popisné a analyzování.

Abstract:

The aim is to develop real business plan to operate bistro after its partial reconstruction in Studenec, close to city Náměšť nad Oslavou, Vysočina Region. Proposed business plan will be used for real operation of bistro in near future. The business plan is based on the fact that there is no facility of this type in this lokality or there is only one specializing in dishes made from venison. The author introduced the concept of the bistro which is built on the quality and speed of prepared dishes and professional conduct of staff. The aim is primarily to acquire new customers from the surrounding area who are still unaware of the existence of the bistro and also the group of passing motorists and cyclists that this new concept will call them. To fulfill the goals of the thesis the author used methods of personal observation, questioning method, comparative and descriptive methods and analysis.
