Abstract:

Bakalářská práce se věnuje zjištění úrovně znalostí správné výrobní a hygienické praxe u studentů středních škol se zaměřením na stravování. Bakalářská práce se skládá z teoretické a praktické části. Má za cíl porovnat úroveň znalostí studentů prvních ročníků se studenty třetích ročníků téhož oboru. Teoretická část popisuje zásady správné výrobní a hygienické praxe a systém založený na principu HACCP. Dotazníkové šetření v praktické části testuje pomocí otázek týkající se Správné výrobní praxe, hygienické praxe, osobní hygieny a znalostí systému založených na principu HACCP. Nejčastější chybné odpovědi z dotazníků mohou případně inspirovat, kam zaměřit pozornost ve výuce studentů.

Abstract:

The focus of this bachelor thesis is to establish the level of knowledge of good manufacturing and hygienic practice for students of high schools specializing in nutrition. This bachelor thesis consists of both theoretical and practical parts. The objective is to compare the level of knowledge between first-year students with those of third-year students within the same field, to determine whether their level of knowledge has improved within those years. The theoretical part describes the principles of good manufacturing and hygiene practice and procedures based on the HACCP guidelines. In the practical part, the survey questionnaire is used to test the students in good manufacturing and hygiene practice, personal hygiene and knowledge of procedures also based on the HACCP guidelines. The most common mistakes found in the results of the questionnaire can possibly inspire where to focus the student's attention in learning.
