Culinary traditions in gastronomy in Cheb Region

Abstract:

Tématem této bakalářské práce jsou Kulinářské tradice v gastronomii na Chebsku. Tato práce je rozdělená do tří částí. Obsahem první části je vývoj gastronomie v historii a vymezení pojmů v gastronomii. Dále je zde popsaná historie Chebska, chebské tradiční Valdštejnské slavnosti, vymezení pojmů jako jsou tradice, zvyky, obyčeje. Dále vysvětluji, co je to regionální a sezónní potravina, uvádím jejich náležitosti a srovnávám jejich výhody a nevýhody. Dále je vysvětlen pojem kulturní transfer a globalizace, jejich definice a jejich vliv na kulinární tradice na Chebsku. V dalších kapitolách jsou popsané tradiční nápoje, včetně jejich přípravy a v posledních kapitolách teoretické části, jsou podrobně pospané svátky jejich význam, průběh, tradice a tradiční pokrmy. U každého svátku je nejprve popsán jejich tradiční průběh a potom průběh typický pro Chebsko. Druhá část této práce je věnována analytické části, která se zabývá kvalitativní metodou výzkumu, a to dotazníkovým šetřením na téma Kulinářské tradice v gastronomii, ve které je cílem dozvědět se informovanost obyvatel Karlovarského kraje o regionálních tradičních pokrmech a slavností. V závěrečné části jsou shrnuty poznámky a výsledky kvalitativního výzkumu. V další části je pak komparace Chebska a Chodska, kde jsou porovnávané jejich společné znaky. V návrhové části jsou uvedená doporučení, která by mohla pomoci šíření chebských tradic a tradičních pokrmů.

Abstract:

Topic of bachelor’s thesis is Culinary traditions in gastronomy in Cheb region. Bachelor’s thesis will be divided into three parts. The content of this thesis in the first part is definition the concept of gastronomy. Also, will be here described history of Cheb region and traditional festivities like Valdštejn festivities and definition of traditions, habits, customs. Then will be described what is regional and seasonal food, what requisities they must meet and comparison their advantages and disadvantages. Then will be explanations of concept cultural transmission and globalization their definition and influence on culinary traditions in Cheb region. In the following chapters are described traditional beverages including their history and in the last part of the theory are described in detail holidays in their course, including traditional cuisine and dishes. At first with every holiday is described the typical traditional process in Czechia and then in Cheb region. The second part is the practical part which is dedicated for research of culinary tradition in Cheb region. Respondents are interviewed about customs, holidays, and traditional cuisine. Also, there is a comparison of similarities of region Cheb and region Chodsko. In the last part of this thesis are listed some suggestions, how to spread information about traditions in Cheb region to residents.
