Preservation of Non-Alcoholic and Low-Alcoholic Beverages
Abstract:
Konzervační zákrok je technologický postup, který zastaví nebo zpomalí nežádoucí produkci přítomných mikroorganismů nebo usmrtí jejich spory. Cílem této práce je charakterizovat výrobu nealkoholických a nízkoalkoholických nápojů a jejich konzervační metody. Z důvodu vzrůstajících požadavků spotřebitelů na výrobce, je nutno se stránkou bezpečnosti a trvanlivosti potravin zabývat a modernizovat je.

The technological process and procedure, whose slow down the production of undesirable microorganisms or spores. The main point of this work is to characterize production of nonalcoholic and low-alcoholic beverages, and to characterize of preservation methods.
