Abstract:

Bakalářská práce je zaměřena na vzdělávání v hotelnictví a gastronomii. Cílem mé práce je utvořit přehled možností vzdělávání pro daný obor, zjistit využívanost externích školících firem pro hotelové zaměstnance, a také ukázat, jaký prospěch by tyto firmy mohly do hotelů přinést. V teoretické části je přehled vzdělávání rozdělený do skupin na formální, neformální a informální. Z těchto tří skupin je nejvíce obsáhlé neformální vzdělávání, jehož část jsem si vybrala k výzkumu v analytické části práce. Dále je popsán proces výzkumu, který jsem zvolila. V analytické části je popsán výzkum, který jsem prováděla pomocí dotazníkového šetření. Vyhodnocení prvního dotazníku obsahuje odpovědi od firem, které se specializují na vzdělávání. Druhý dotazník podává informace od vedoucích pracovníků hotelů k jejich preferencím vzdělávání svých pracovníků. Dotazníky jsou vyhodnoceny pomocí grafů, tabulek a slovního zhodnocení. Návrhová část obsahuje mou úvahu po vyhodnocení výsledků dotazníkového šetření. Na základě výsledků tohoto výzkumu jsem vypracovala návrh osnovy školení pro zaměstnance hotelů v první linii.

Abstract:

This Bachelor dissertation focuses on education in the hotel industry and gastronomy. The aim of my work is to create an overview of the educational possibilities in this field, find out how the external training firms for hotel employees are used and also to show what benefit these firm could bring to hotels. The theoretical part contains overview of education divided into groups of formal, nonformal and informal education. The nonformal part is the most extensive, part of it I chose for research in the analytical part of my dissertation. Further there is a description of the research methodology I chose. The analytical part contains my research which was carried out with the help of a questionnaire survey. The evaluation of the first questionnaire contains answers from firms specialized in education. The second questionnaire contains answers from hotel managers on their preferences for their employees’ education. The questionnaires are evaluated with graphs, tables and written assessment. The proposition part contains my reflection after evaluating the results of the questionnaire survey. On the basis of these results it also suggests a training scheme for hotel employees in the first line.
