Technology of Growing and Processing of Edible Mushrooms and Their Use in Gastronomy
Abstract:
Bakalářská práce se zabývá jedlými houbami z gastronomického hlediska. Je v ní zařazena obecná charakteristika jedlých hub, technologie pěstování, zpracovaní a využití v gastronomii. Dále obsahuje životní cyklus hub, seznámení s využitelnými houbami v gastronomii, jejich sběr a konkrétní kulinářské úpravy, nápady a recepty.
Abstract:
The bachelor thesis deals with the edible mushrooms from the gastronomic point of view. It includes the general characteristics of edible mushrooms, technology of cultivation, processing and utilization in gastronomy. It also contains a mushroom life style, familiarization with usable mushrooms in gastronomy, their collection and specific culinary arrangements, ideas and recipes.
