Mycotoxins in Wine

Abstract:

Bakalářská práce „Mykotoxiny ve víně“ se v první části zaměřuje na obecný přehled o mykotoxinech, popisuje všeobecně významné mykotoxiny, příčiny jejich vzniku v potravinách a toxicitu. Je zde stručně popsáno několik skupin hlavních mykotoxinů rozdělených dle jejich struktury. Následují hlavní kapitoly této práce, kde se nejprve pojednává o nejznámnějších mikroorganismech produkujících mykotoxiny, jež mohou kontaminovat hrozny, víno nebo vinařské provozy. Další a nejdůležitější kapitola je o mykotoxinech ve víně, faktorech jejich výskytu, o možném ovlivnění jejich obsahu, jejich degradaci a limitech a na to navazuje prevence vzniku mykotoxinů. Předposlední kapitola pojednává o metodách stanovení mykotoxinů ve víně, popisuje metody imunochemické a chromatografické. Na závěr je v této práci popsán vliv mykotoxinů na lidské tělo, akutní a chronické intoxikace a nemoci, které mykotoxiny způsobují.

Abstract:

The first part of the bachelor thesis „Mycotoxins in Wine“ focuses on a general overview of mycotoxins and describes generally important mycotoxins, the causes of their formation in food and their toxicity. Then it briefly describes several groups of major mycotoxins divided according to their structure. The main chapters of the thesis that follow discuss the best-known mycotoxin-producing microorganisms, that can contaminate grapes, wine or wine cellars. The next and the most important chapter is about mycotoxins in wine, occurrence factors, possible ways to affect their contents, their degradation, limits and this is followed by prevention of mycotoxins formation. The penultimate chapter discusses methods for determination of mycotoxins in wine, describes imunochemical and chromatographic methods. At the end of the thesis, there is explained impact of mycotoxins on human health and acute and chronic intoxications and diseases caused by mycotoxins are mentioned as well.
