Diplomová práce byla vypracována na Ústavu posklizňové technologie zahradnických produktů Zahradnické fakulty Mendelovy Univerzity v Brně v letech 2019/2020. Teoretická část se věnuje aktivitě vody v potravinách, sušením ovoce a zeleniny, lyofilizací, bobtnavostí dehydratovaných výrobků a jejich látkovým složením. The diploma thesis was elaborated at the Institute of Post-Harvest Technology of Horticultural Products of the Faculty of Horticulture of Mendel University in Brno in 2019/2020.
