Abstract:

Předložená diplomová práce na téma „Podnikatelský plán a záměr pro mikropodnik v oblasti gastronomie“ se zabývá tvorbou podnikatelského plánu a veškerých náležitostí, které jsou s ním spojené. Cílem mé diplomové práce je přiblížení tvorby podnikatelských plánů a následné vytvoření samostatného podnikatelského plánu pro zamýšlenou restauraci. Práce je rozdělena do tří částí, a to na část teoretickou, praktickou a návrhovou. V teoretické části jsou vymezeny základní pojmy podnikání, stručně charakterizován podnikatelský záměr a podrobněji rozepsaný podnikatelský plán. Praktická část slouží jako podklad pro vypracování podnikatelského plánu. Obsahuje popis podnikatelského záměru a charakteristiku zamýšleného podniku. S tím se pojí detailní vypracování požadavků na podnikatele, jejichž záměrem je podnikání na švýcarském trhu a rozepsání vhodných právních forem. Dále praktická část obsahuje podrobně vypracované analýzy trhu a konkurence, PESTEL analýzu a analýzu rizik, které jsou nezbytné k naplnění cílů diplomové práce. K vypracování praktické a následné návrhové části napomohly vlastní zkušenosti autora doplněné o cizojazyčnou literaturu. Zpracování návrhové část bylo vypracováno na základě provedených analýz a vlastních zkušeností. Slouží především jako praktický příklad tvorby podnikatelského plánu pro zamýšlenou horskou restauraci ve Švýcarsku. Návrhová část představuje ucelený podnikatelský dokument doplněný o komparaci již zavedeného podniku se zamýšleným podnikem, marketingový mix, organizační plán a podrobný vypracovaný finanční plán. Finanční plán je založený na reálných nákladech, které jsou nezbytné k založení společnosti a vybavení restaurace.

Abstract:

The presented thesis on "Business plan and intention for a microenterprise in the field of gastronomy" deals with the creation of business plans and all the requirements associated with it. The aim of the thesis is to approach the creation of business plans and then the creation of a separate business plan for the restaurant under consideration. The thesis is divided into three parts, the theoretical, practical and project part. In the theoretical part, the fundamental concepts of entrepreneurship are defined, the business intention is briefly characterized and the business plan is described in detail. The practical part serves as a basis for the development of the business plan. It contains a description of the business intention and the characteristics of the intended enterprise. This entails a detailed elaboration of the requirements for entrepreneurs who intend to do business on the Swiss market and a list of the appropriate legal forms. Furthermore, the practical part contains a detailed market and competition analysis, a PESTEL analysis and a risk analysis, which are necessary to fulfil the aims of the thesis. The author's own experience supplemented by foreign language literature helped to develop the practical and subsequent project part. The development of the project part was based on the performed analyses and own experience. It serves primarily as a practical example of the creation of a business plan for a intended mountain restaurant in Switzerland. The project part is a comprehensive business document supplemented by a comparison of the already established enterprise with the intended enterprise, a marketing mix, an organizational plan and a detailed financial plan. The financial plan is based on the realistic costs that are necessary to set up the enterprise and equip the restaurant.
