Abstract:
Předmětem diplomové práce bylo stanovení diacetylu, methylglyoxalu, glyoxalu a pentandionu ve vzorcích vín pomocí kapalinové chromatografie HPLC. Teoretická část práce se zabývá chemickým složením vína, významem výše zmíněných dikarbonylových sloučenin a jednotlivých metod pro jejich stanovení. The main object of diploma thesis was to determine of diacetyl, methylglyoxal, glyoxal and pentanedione in samples of wines by liquid chromatography HPLC. The theoretical part deals with the chemical composition of the wine, the importance of the aforementioned dicarbonyl compounds and various methods for their determination.
