Finger foods and their use in nutritional care

Abstract:

Cílem této bakalářské práce je posouzení využitelnosti finger foods v nutriční péči, oblíbenosti této formy stravování v zařízeních pro péči o seniory a osoby s neurogenerativním onemocněním. Jako hlavní zdroj informací byly použity zkušenosti personálu a jejich klientů. K dosažení cíle práce byla použita metoda kvantitativního anonymního dotazníku, kdy respondenti odpovídali dle svých zkušeností z praxe. Provedeným výzkumem bylo zjištěno, že stravování formou finger foods je vhodné zvláště pro pečovatelské domy a centra, kde senioři a nemocné osoby tráví zbytek svého života. Tato forma stravování je seniorům příjemným zpestřením dne. V centrech pro osoby s neurogenerativním onemocněním pomáhá klientům zachovávat soběstačnost a tím pečujícím uspoří čas. Pokud budou jednotlivé kousky vizuálně a chuťově zajímavé, budou je klienti lépe přijímat a pak to může pomoci předcházet jejich podvýživě. Hlavním zjištěním výzkumu bylo kladení důrazu na podávání stravy lákavou formou vizuálně i chuťově. Strava musí být snadno konzumovatelná, aby personálu její příprava nepřidávala práci. Klienty pak samostatná konzumace jídla vedla k samoobsluze a k soběstačnosti.

Abstract:

The aim of this bachelor's thesis is to assess the usability of finger foods in nutritional care, the popularity of this form of eating in facilities for the care of the elderly and people with neurogenerative diseases. The experience of the staff and their clients was used as the main source of information. To achieve the aim of the work, the quantitative anonymous questionnaire method was used, where the respondents answered according to their practical experience. The conducted research found that eating finger foods is especially suitable for nursing homes and centers where seniors and sick people spend the rest of their lives. This form of eating is a pleasant addition to the day for seniors. In centers for people with neurogenerative diseases, it helps clients maintain self-sufficiency and thus saves caregivers time. If the individual pieces are visually and taste interesting, the clients will accept them better and then it can help to prevent their malnutrition. The main finding of the research was the emphasis on serving food in an attractive form, both visually and in taste. The food must be easy to consume so that the staff does not have to work hard to prepare it. Independent consumption of food led clients to self-service and self-sufficiency.
