Cílem bakalářské práce bylo vytvořit terminologický slovníček týkající se zpracování masa a přípravy masných pokrmů. Nejprve vysvětlujeme pojmy termín, profesionalismy, slang. Potom se zabýváme historií lovu zvěře a chovu dobytka, kvalitou masa, jeho skladováním a zpracováním. Zaměřujeme se i na rozdíly při bourání masa v ČR a na Ukrajině. Abstract:
The aim of this thesis was to create a glossary of terminology relating to the preparation of meat and meat dishes. First, the concepts of the term professionalism, slang. Then we deal with the history of hunting and cattle breeding, meat quality, its storage and processing. We also focus on the differences in meat cutting in the Czech republic and Ukraine.
