White wine and their antioxidant capacities

Abstract:

Diplomová práce pojednává o vlastnostech a výskytu antioxidantů v bílých vínech. Rešeršní část se zabývá antioxidační kapacitou a metodami jejího měření, charakterizuje rozdělení antioxidantů a popisuje technologii výroby bílých vín. Práce byla vypracována na Ústavu posklizňové technologie zahradnických produktů Zahradnické fakulty Mendelovy univerzity v Brně. Experimentální část zahrnuje stanovení antioxidační kapacity metodou FRAP u dvaceti vzorků vín a stanovení obsahu polyfenolů u čtyř vzorků vín. Experiment byl proveden na čtyřech odrůdách révy vinné, kdy byly zastoupeny všechny podoblasti v České republice. Nejvyšší koncentrace antioxidantů byla naměřena u odrůdy Ryzlink rýnský, podoblast znojemská 2,67 mmol.l-1. Naopak nejnižší hodnota 1,18 mmol.l-1 byla naměřena u odrůdy Rulandské šedé, podoblast mělnická.

Abstract:

The diploma thesis discusses the properties and occurrence of antioxidants in white wines. The research part deals with the antioxidant capacity and methods of its measurement, characterizes the distribution of antioxidants and describes the technology of white wine production. Thesis was elaborated at the Department of Post-harvest Technology of Horticultural Products at the Faculty of Horticulture, Mendel University in Brno. The experimental part includes the determination of the antioxidant capacity by the FRAP method in twenty wine samples and the determination of the content of polyphenols in four grape varieties, where all subregions in the Czech republic were represented. The highest concentration of antioxidants was measured in Riesling variety 2,67 mmol.l-1, znojmo subregion. On the other hand the lowest value of 1,18 mmol.l-1 was measured in Pinot Gris variety, mělník subregion.
