Abstract:

Tato bakalářská práce, jak již název práce napovídá, se zabývá využitím menu engineeringu v gastronomii, s cílem maximalizovat potenciál menu. Vytvoření atraktivního menu je pro podnik důležité, jelikož dává hostům možnosti výběru. Práce je rozdělena do tří částí. První část je teoretická, pojednává o počátcích gastronomie, trendech v gastronomii a různých druhů menu. Druhá část je analytická, kde se provádí analýza menu pomocí primárních dat z vybrané restaurace. Údaje zahrnují všechny pokrmy v nabídce s jednolivými údaji jako je název, výrobní náklady, prodejní cena a množství prodaných pokrmů. Časové období, ve kterém byla data nashromážděna, zahrnují celý kalendářní rok 2018. Data jsou poté zpracována tak, aby byly získány vhodné výsledky. Na základě těchto výsledků je možné umístit všechny položky menu do čtyř kvadrantů BCG matice, kterými jsou: hvězdy, otázníky, dojné krávy a bídní psi. Zvolená restaurace nabízí třicet pět položek, které jsou rozděleny do devíti kategorií, podle typu pokrmu. Třetí a závěrečná část práce popisuje výsledek analýzy nabídky a navrhuje různé způsoby zvyšování popularity a profitability menu pomocí úpravy cen, propagace, zdokonalení nebo odstranění určitých položek.

Abstract:

This dissertation deals with, as the title of the thesis suggests, the use of menu engineering within gastronomy in order to maximize the potential of the menu. Creating an attractive menu is crucial for an establishment as it gives the guest the options to choose from. The thesis is divided into three parts. The first part is theoretical, discussing the beginnings of gastronomy, trends in gastronomy and different kinds of menu. The second part, analytical, is where the actual menu engineering analysis is done using primary data from the selected restaurant. The data consists of all the food items on the menu, names, the cost of production, the selling price and the amount of unit sales of each item. The time period during which the data has been collected is from the entire calendar year of 2018. The data is then processed to receive the proper results. Based on these results it is possible to place all of the menu items into one of the four quadrants of the BCG Matrix which are: stars, plowhorses, puzzles and dogs. The selected restaurant offers thirty five items which are separated into nine categories, based on the type of food they are. The third and final part of this thesis describes the result of the menu engineering analysis and proposes different ways of increasing popularity and profitability of the menu by modifying prices, promoting, improving or removing certain items.
