Making wine in qvevri

Abstract:

Tato diplomová práce se zabývá problematikou výroby vín v kvevri. V literární části je popsána výroba kvevri, tradiční metody výroby vín v kvevri a jejich chemické složení. Experimentální část se věnuje porovnání vín z kvevri s dalšími způsoby výroby. Z jedné suroviny bylo vyrobeno víno třemi různými technologiemi: reduktivní cestou v inertní nádobě, fermentací se slupkami v dřevěném sudu a v nádobě kvevri. Ve druhé části pokusu byl nashromážděn soubor moravských vín z kvevri. Všechna získaná vína byla senzoricky a analyticky vyhodnocena. Z výsledků vyplývá, že vína vyrobená v kvevri měla nejvyšší obsah celkových fenolů a katechinů. Byla také prokázána nejvyšší hodnota pH a zároveň nejnižší obsah titrovatelných kyselin a kyseliny vinné. Obsah kyseliny octové byl sice nejvyšší u vín z kvevri, nepřekonal však práh vnímání. Experimentem bylo také potvrzeno, že lze vyrobit víno v kvevri bez přídavku oxidu siřičitého, aniž by byly negativně ovlivněny jeho senzorické vlastnosti. V senzorickém hodnocení byla vína z kvevri hodnocena jako intenzivní a komplexní v chuti i vůni, s tóny sušeného ovoce, koření a bylin.

Abstract:

This diploma thesis deals with qvevri wine production. The theoretical part describes making qvevri, traditional qvevri wine-making methods and chemical composition of qvevri wines. The experimental part is devoted for comparison of making wine in qvevri with next wine-making methods. In the second part of experiment, the set of moravian wine was completed. All of wines were chemical and sensory analyzied. The results show, that qvevri wines had the highest content of total phenols and catechins. The highest pH value was proven too and the content of titratable acids and tartaric acid was the lowest. The content of acetic acid was the highest in qvevri wines but the threshold of perception was not overcame. The experiment confirmed, that it is possible, making wine without the addition of sulfure dioxid, without negatively affecting its sensory properties. In sensory analysis, the qvevri wines was described as intense and complex in taste and smell, with tones of dried fruit, spice and herbs.
