Selected aspects and differences of preferences in the choice of food between groups of employees and clients in catering services

Abstract:

Cílem mojí práce bylo pomocí dotazníkového šetření pozorovat rozdílné aspekty a preference při výběrů pokrmů mezi skupinami strávníků z řad zaměstnanců a klientů Národního centra. V teoretické části jsem se zaměřila na historii výživy, hlavní složky výživy, výživová doporučení a aktuální legislativu. Praktickou část jsem uskutečnila formou dotazníkového šetření, kterým jsem oslovila zaměstnance Národního centra a účastníky vzdělávacích akcí v Národním centru. Dotazník byl odeslán na 2132 e-mailových adres, bylo tedy osloveno 2132 zaměstnanců a klientů Národního centra. K finálnímu zpracování se vrátilo 472 vyplněných dotazníků. Dotazník obsahoval otázky, které se týkaly preference a frekvence konzumace vybraných potravin a pokrmů. Výsledky šetření ukazují, že strávníci nejvíce v pokrmech sledují obsah ochucují-cích látek a soli, mají pozitivní přístup ke zdravým pokrmům a bezmála 60 % respondentů uvádí, že konzumují čerstvou zeleninu a ovoce každý den. Současně jsem zjisti-la, že je rozdíl mezi věkovými kategoriemi ve vnímání pokrmů podávaných v Národním centru. Starší věková kategorie je tolerantnější.

Abstract:

The aim of my thesis was to observe different aspects of food choices and food prefer-ences between groups of boarders from the ranks of employees and clients of the Na-tional Centre through a questionnaire survey. In the theoretical background I focused on the history of human nutrition, the main components of nutrition, dietary recom-mendations and current food legislation. I carried out the practical part in the form of a questionnaire survey. The questionnaire was sent to employees of the National Centre and participants in educational events at the National Centre. 2132 respondents were contacted via e-mail. 472 completed questionnaires were returned for final processing. The questionnaire contained questions related to the food preferences and frequency of consumption of chosen foods and dishes. The results of the survey show that boarders pay the most attention to the content of flavourings and salt in food, they have a posi-tive attitude towards healthy foods, and less than 60% of respondents say that they consume fresh vegetables and fruits every day. It was also found that there is a differ-ence between age categories of boarders in the perception of dishes served at the Na-tional Centre. Boarders from a higher age category are more tolerant.
