Possibilities of fat identification using gas chromatography

Abstract:

Cílem této práce bylo zhodnotit možnosti identifikace tuků pomocí plynové chromatografie. Popsat jednotlivé složky lipidů, zaměřit se na mastné kyseliny a jejich přeměnu při procesu hydrogenace. Zhodnotit zdravotní atributy jak samotných lipidů, tak mastných kyselin přeměněných během hydrogenace obsažených v potravinách. V práci je také obecně popsán proces chromatografie se zřetelem na plynovou chromatografii, která je využita v praktické části. V té se hodnotilo 8 různých čokoládových cukrovinek, které se nejprve extrahovaly, poté derivatizovaly a následně vstřikovaly do chromatografu, kde se vyhodnocovalo jednotlivé zastoupení mastných kyselin.

Abstract:

The aim of this work was to evaluate the possibilities of fat identification using gas chromatography. Describe the individual components of lipids, focus on fatty acids and their conversion in the hydrogenation process. To evaluate the health attributes of both lipids themselves and fatty acids converted during hydrogenation contained in food. The work also generally describes the process of chromatography with respect to gas chromatography, which is used in the practical part. In it, 8 different chocolate confectionery were evaluated, which were first extracted, then derivatized and then injected into a chromatograph, where the individual fatty acid content was evaluated.
