Analysis of the organic food market in Brno

Abstract:

Diplomová práce se zabývá zpracováním analýzy trhu s biopotravinami v Brně. Nejprve je zpracovaná teoretická část, která se týká charakteristiky biopotravin a také jejich původu, tedy ekologického zemědělství. Ve zmíněné části jsou popsány požadavky na produkci biopotravin a jejich zpracování. Také jsou popsány jednotlivé distribuční cesty biopotravin. Praktická část je věnovaná analýze trhu ve městě Brně, je tudíž vyhodnocena stávající situace trhu vybraných druhů biopotravin rostlinného a živočišného původu. Byl vypracován průzkum vybraných cen biopotravin v kamenných prodejnách devíti obchodních řetězců, které byly navštíveny osobně a proběhlo porovnání s konvenčními cenami potravin. Sledování bylo prováděno ve dvou částech, aby mohlo dojít k meziročnímu srovnání cen. V první části byly sledovány ceny potravin a biopotravin za rok 2023 v období duben – květen. Ve druhé části bylo realizováno stanovování cen za rok 2024 v období leden – únor. Vyhodnocení výsledných hodnot je zpracované do tabulek pomocí programu Excel a vyneseno do grafů, výsledky jsou řádně okomentovány. Dále bylo zpracováno dotazníkové šetření se zaměřením na zjištění informací ohledně celkového přístupu a zájmu respondentů o biopotraviny. Z celkového šetření je zřejmé, že jednoznačně nakupují biopotraviny více ženy než muži. Jedná se zejména o ženy v reprodukčním věku, které mají o nákup biopotravin zájem hlavně kvůli svým dětem. Spotřebitele nejvíce ovlivňuje cena biopotravin, jejich složení a původ. Spotřebitelé často nekupují biopotraviny hlavně proto, že jsou dražší než ostatní potraviny a od nákupu je odrazuje nízká informovanosti a propagace. Bylo zjištěno, že potenciál ekologického zemědělství v Česku není patřičně využitý a nabízí předpoklad v navýšení produkce bioproduktů vysoké kvality, avšak velikost trhu s biopotravinami vykazuje pozitivní vývoj. Pro český trh s biopotravinami je zásadní krok ve vývoji zvýšení míry propagace a informovanosti spotřebitelům a také navýšení ploch orných půd v ekologickém zemědělství. V následujících letech je žádoucí podporovat produkci komodit, které je možné vyprodukovat v ČR a nedovážet je ze zahraničí. Velká rezerva prvovýroby tkví v odbytu. Majoritní část ekofarem z části nebo zcela prodá svoji produkci do konvence a pouhá desetina farem prodá veškerou svoji produkci jako bio. Tato skutečnost navyšuje vazbu ekofarem na dotacích.

Abstract:

The diploma thesis deals with the analysis of the organic food market in Brno. Firstly, the theoretical part is processed, which concerns the characteristics of organic food and also their origin, namely organic farming. It describes the requirements for the production of organic food and their processing. Also, the various distribution channels of organic food are described. The practical part is devoted to the analysis of the market in the city of Brno, thus evaluating the current market situation of selected types of plant and animal based organic food. A survey of selected organic food prices was conducted in brick-and-mortar stores of nine retail chains, which were personally visited, and a comparison with conventional food prices was made. The monitoring was conducted in two parts to allow for year-on-year price comparisons. In the first part, food and organic food prices for the year 2023 were monitored during the period of April-May. In the second part, price determination for the year 2024 was carried out during the period of January-February. The evaluation of the resulting values is processed into tables using Excel and plotted into graphs, with the results being adequately commented on. Furthermore, a questionnaire survey was conducted to ascertain information regarding the overall attitude and interest of respondents in organic food. From the overall survey, it is clear that organic food is predominantly purchased by women rather than men. This particularly includes women of reproductive age, who are interested in purchasing organic food, mainly for their children. Consumers are most influenced by the price, composition, and origin of organic food. Main reasons for not buying the organic food is its price in comparison with comparable non-organic food, combined with low awareness and promotion. Although the size of the organic food market shows positive development, it was found that the potential of organic farming in the Czech Republic is still not adequately utilized and offers the prospect of increasing the production of high-quality organic products. A crucial step in the development of the Czech organic food market is to increase the level of promotion and consumer awareness, as well as to increase the area of arable land for organic farming. In the following years, it is desirable to support the production of commodities that can be produced in the Czech Republic and not imported from abroad. There is a significant reserve in primary production sales. The majority of eco-farms either partially or entirely sell their produce to conventional markets, and only a tenth of farms sells all their produce as organic. This fact increases the dependency of eco-farms on subsidies.
