Cílem bakalářské práce bylo vytvořit rešerši na téma využití bakterií rodu Lactobacillus v potravinářství. Bakterie rodu Lactobacillus jsou využívány především ve fermentovaných výrobcích. Jsou součástí čistých mlékárenských kultur a jsou využívány pro výrobu celé řady mléčných výrobků. Jsou přirozenou součástí lidského těla, proto mají také medicínské využití jako probiotika. Abstract:
The bachalor thesis is focused on creating a research about the use of bacteria of the genus Lactobacillus in food industry. Lactobacillus bacteria are mainly used in fermented products. They are used in dairy cultures, which are used to produce a wide range of dairy products. They are a natural part of a human body, so they have a medical use as probiotics.
