Catering in selected hospitals in the Central Bohemian Region

Abstract:

Tématem předkládané bakalářské práce je analýza spokojenosti pacientů v oblasti stravování dvou vybraných nemocnic ve Středočeském kraji, kterými jsou Oblastní nemocnice Mladá Boleslav, a.s. nemocnice Středočeského kraje a Nemocnice Nymburk, s.r.o. Hlavním cílem této práce je zjistit, zda je stravování ve velké krajské nemocnici kvalitativně lepší z pohledu pacientů. V teoretické části jsou charakterizovány jednotlivé formy stravování, shrnuty definice pojmů jako racionální výživa, dietní systém, složky stravy a poruchy příjmu potravy. V analytické části je popsáno nemocniční stravování i finanční hledisko nemocničního stravování. Dále jsou v této části představena vybraná nemocniční zařízení a jejich systém stravování. Následuje porovnání spokojenosti pacientů se stravováním v uvedených nemocnicích. Pro analýzu spokojenosti je použita metoda kvantitativního sběru dat. K získání dat je využito dotazníkové šetření a řízené rozhovory s nemocničním personálem. Doporučení pro zlepšení nemocničního stravování pro obě nemocnice tvoří část bakalářské práce výstupy a poznatky práce.

Abstract:

The topic of the presented bachelor thesis is the analysis of patients’ satisfaction in the area of catering at two selected hospitals in the Central Bohemian Region, which are Regional Hospital Mladá Boleslav, a.s. Central Bohemian Region Hospital and Nymburk Hospital, s.r.o. The main focus of this thesis is to find out whether the catering in a large regional hospital is qualitatively better from the patients' point of view. In the theoretical part, individual forms of catering are characterized, definitions of terms such as rational nutrition, dietary system, food components and eating disorders are summarized. In the analytical part, selected hospital facilities, their catering systems and also financial aspect of hospital nutrition are presented. Furthermore, selected hospital facilities and their catering systém are presented in this part. The following is a comparison of patient satisfaction with meals in the mentioned hospitals. The method of quantitative data collection is used to analyze satisfaction. A questionnaire survey and controlled interviews with hospital staff are used to obtain data. Recommendations for improving hospital catering for both hospitals form part of the bachelor's thesis, the outputs and findings of the work.
