Abstract:
V této diplomové práci byly zjišťovány inhibiční účinky kmenů Streptococcus thermophilus vůči kmenům Bacillus subtilis a Listeria innocua. V teoretické části je pojednáno o bakteriích mléčného kvašení, dále o kmenu Streptococcus thermophilus a o jeho vlastnostech a produktech metabolismu. In this diploma thesis were investigated the inhibitory effects of Streptococcus thermo-philus strains against of Bacillus subtilis and Listeria innocua strains. In the theoretical part is dealing with the lactic acid bacteria, the strains of Streptococcus thermophilus and its properties and metabolic products.
