Diplomová práce se zabývá obsahem antioxidační kapacity, celkovým obsahem polyfenolů a minerálních látek ve vybraných druzích naklíčených semen zrnin. Teoretická část pojednává o procesu klíčení semen, jejich postupech a stručně charakterizuje zvolené druhy obilovin a zeleniny. This thesis deals with the content of antioxidant capacity, total content of polyphenols and minerals in selected species of grain sprouted seeds. The theoretical part discusses the process of seed germination, their practices and briefly describes selected types of cereals and vegetables.
