Extension of the Service Offer in the Selected Restaurant

Abstract:

Bakalářská práce se zabývá moderní gastronomií. Teoretická část se zaměřuje na základní pojmy a specifika z této oblasti, jejími novými trendy a rovněž na spokojenost zákazníka. Jejím hlavním tématem je moderní a zážitková gastronomie, která je zde teoreticky vymezena a popsána. Dále je představena restaurace Imrvére, služby, které nabízí a přehled denních součtů během pandemie nemoci Covid-19 v letech 2020 a 2021. Cílem této bakalářské práce je návrh gastronomické akce s prvky zážitkové gastronomie se zaměřením na řeckou kuchyni. Praktická část je provedena formou dotazníkového šetření, na jehož základě je vytvořen návrh již zmíněné gastronomické akce. Tento návrh je dále zpracován včetně popisů jednotlivých pokrmů, předběžné kalkulaci, a to včetně dalších nákladů potřebných k uskutečnění této akce a vytvoření ilustračního propagačního letáku.

Abstract:

Bachelor thesis deals with modern gastronomy. The theoretical part focuses on the basic concepts and specifics of this area, its new trends and customer satisfaction. Its main topic is modern and experience gastronomy, which is theoretically defined and described here. The Imrvére restaurant, the services it offers, and an overview of the daily totals during the Covid-19 pandemic in 2020 and 2021 are also presented. The aim of this bachelor's thesis is to design a gastronomic event with elements of experience gastronomy with a focus on Greek cuisine. The analytical part is carried out in the form of a questionnaire survey, on the basis of which a proposal for the already mentioned gastronomic event is created. This proposal is further processed, including descriptions of individual dishes, their preliminary calculation, including other costs necessary for the implementation of this event and the creation of an illustrative promotional leaflet.
