Fortification of pizza dough by edible insects

Abstract:

Diplomová práce je zaměřena na fortifikaci pizza těsta jedlým hmyzem, konkrétně moučkou z larev potemníka moučného (Tenebrio molitor). Larvy potemníka moučného obsahují bílkovin až 76 % v sušině, vykazují dobré aminokyselinové složení. Potemník moučný může být také cenným zdrojem vitaminů - A, D, E, K, C a minerálních látek, především zinku, hořčíku, mědi, fosforu či draslíku. Práce sleduje především změny ob-sahu dusíkatých látek, aminokyselin a vybraných minerálních látek vlivem přídavku 5 % a 10 % hmyzí moučky. Výsledky stanovení dusíkatých látek, aminokyselin a minerálních látek byly sledovány ve vzorcích bez přídavku moučky s 5 % a 10 % moučky potemníka moučného. Bylo dokázáno, že vlivem přídavku hmyzí moučky se obsah sušiny nemění, roste však podíl bílkovin v sušině. Získané výsledky ukázaly, že vlivem přídavku 5 % moučky potemníka moučného se obsah aminokyselin nezvyšoval, případně jen nepatrně, v přídavku 10 % této moučky byly hodnoty již výrazně vyšší, především pro esenciální aminokyseliny, oproti vzorkům bez a s 5 % přídavkem moučky. Analýzou minerálních látek bylo zaznamenáno zvýšení obsahu vybraných minerálních prvků vlivem přídavku hmyzí moučky, a to v případě 5% i 10% přídavku této moučky. Nejvyššího růstu dosaho-val zinek, fosfor, železo, hořčík a měď. Měřením termodynamickými senzory bylo zjiště-no, že s přídavkem hmyzí moučky došlo k nárůstu počátku fermentace vzorku. Výsledky elektronického nosu prokázaly, že s přídavkem moučky roste rychlost kynutí.

Abstract:

The diploma thesis is focused on the fortification of pizza dough by edible insects, secifi-cally flour from the larvae of mealworm (Tenebrio molitor). Mealworm flour larvae con-tains up to 76 % protein in dry matter, they have a good amino acid composition. The thesis mainly monitors changes in the content of nitrogenous substances, amino acids and selected minerals due to the addition of 5% and 10% insect flour. Powdery mealworm can also be a valuable source of vitamins - A, D, E, K, C and minerals, especially zinc, magnesium, copper, phorphorus or potassium. The results of the determination of nitro-genous substances, amino acids and minerals were monitored in samples without the ad-dition of flour, with 5 % and 10 % of flour. It has been shown, that the dry matter content does not change due to the addition of insect flour, but the proportion of protein in the dry matter increases. The obtained results showed, that due to the addition of 5% flour, the amino acid content did not increase, or only slightly, in the addition of 10 % of this flour the values were significantly higher, especially for essential amino acid, compared to samples without and with 5 % flour, The analysis of mineral substances showed an icrea-se in the content of selected mineral element due to the addition of insect flour, both in the case of 5% and 10% of the addition of this flour. Zinc, phosphorus, iron, magnesium and copper had the highest growth. Measurements by thermodynamic sensors revealed that with the addition of insect flour, the onset of fermentation of the sample increased. The results of the electronic nose showed a correlation between the addition of insect flour anthe rate of leavening.
