Eating habits of future gastronomes

Abstract:

Anotace Cílem diplomové práce bude provést analýzu stravovacích návyků budoucích gastronomů ve vybraném regionu, se zaměřením na tepelné úpravy pokrmů, podle moderních trendů v gastronomii a výživě. Provedená analýza by měla dát výsledky, zdali se budoucí gastronomové stravují podle zásad zdravé výživy či nikoliv, neboť to může mít dopad na přípravu pokrmů dalších strávníků. V teoretické části práce seznamuje se základními složkami výživy a s průběhem analýzy stravovacích návyků, dále uvádí výživová doporučení a zásady správné výživy s hlediskem na tepelné úpravy pokrmů a trendy ve výživě. Praktická část se věnuje kvantitativnímu výzkumu problematiky, metodou dotazníkového šetření porovnává stravovací návyky budoucích gastronomů a výživová doporučení. Na praktickém příkladu ukazuje sestavení jídelního lístku dle nejnovějších trendů v gastronomii u tepelných úprav, včetně technologických postupů.

Abstract:

Annotation The goal of this master’s thesis is to analyze the eating habits of future gastronomes in the selected region, with a focus on the preparation of food by heat treatment, according to the modern trends in gastronomy and in nutrition. The analysis performed should give results, whether future gastronomes eat according to the principles of a healthy diet or not, because it may have an impact on food preparation for other diners. The theoretical part of this thesis introduces the basic components of nutrition and the process used for the analysis of eating habits. Later the thesis states nutrition recommendations and principles of proper nutrition with consideration of the preparation of meals by heat treatment and also it states modern trends in nutrition. The section of practical application deals with the issue of quantitative research. By questionnaire survey method it compares the eating habits of future gastronomes and the nutrition recommendations. By using of the practical example the thesis shows the process of composition of the menu according to the latest trends in gastronomy for heat treatments, including technological processes.
