Production of fortified wines with a focus on vermouths.

Abstract:

Tato diplomová práce pojednává nejen o legislativním přehledu fortifikovaných vín a vermutů, ale i o jejich způsobech ve výrobě, která byla vytvořena prvně v zahraničních státech. Následně je popsán vybraný seznam bylin, se zaměřením na jejich historii, morfologické znaky a účinné látky. Dále se zaměřuje na popis hlavní použité odrůdy, ze které se vyrábí jednotlivé části pokusu. Závěrem je v části experimentální analyticky vyhodnoceno víno, soubor vyrobených bylinných macerátů a vzorků, přičemž je zde snahou docílit nahrazení povinné byliny pelyňku jinými bylinami. Vzorky jsou v konečné fázi posouzeny též senzoricky.

Abstract:

This diploma thesis deals not only with the legislative overview of fortified wines and vermouths, but also with their methods of production, which was created for the first time in foreign countries. Subsequently, a selected list of herbs is described, focusing on their history, morphological features and active components. It also focuses on the description of the main varieties used, from which the individual parts of the experiment are produced. Finally, in the experimental part, is the wine analytically evaluated, a set of produced herbal macerates and samples, while there is an effort to replace the mandatory herb wormwood with other herbs. Samples are also considered sensory in the final phase.
